Casseroles remind me of my grandma’s kitchen, and I guess I’m not the only one. Oven dishes like these are easy to put together and comforting, heart-warming and satisfying. Casseroles are the quintessential home-cooked meals; that’s how food should always taste like.

And although all casseroles are delightful, some are out of this world, and that’s the case with this cheesy and creamy broccoli chicken casserole. This one is so good that even broccoli-haters will dig in.

The best part? There are literally no carbs in this one, so it’s super keto, meaning super healthy and aligned with your weight-loss goals.

Before we get started with the recipe, let start from the beginning. What makes a casserole so unique? Well, here’s all you need to know.

Why Do We Love Casseroles So Much?

Here’s the thing with casseroles, they’re one-pot dishes, baking pans, to be precise. This means they’re mess-free. It also means that all the ingredients cook together as their flavors merge for one good bite after another.

The best casseroles are also always cheesy. For this recipe, we’re using one cup of mozzarella and half a cup of cheddar cheese, and I’ve seen cheesier casseroles!

The cheese gets all gooey and soft, and it browns nicely in the oven or broiler. The rest can be anything from ground meat to chicken, and a few veggies help lift the whole dish to new heights.

If you have never tried cheese and broccoli, be prepared to be surprised. The two together are a fantastic side dish, but the bright-green little trees give consistency to the casserole in this recipe.

Excellent Tips For Making Casseroles

Although all casseroles are a bit different, they can all benefit from the following tips. See if one of these sings to you — they might just be what your casserole needed.

  • Always preheat the oven and do so at least fifteen minutes before putting in your casserole.
  • Forget about frozen veggies; they aren’t good for casseroles. They’ll end up soggy and sad. Always use fresh veggies. Don’t worry; they’ll cook through just right.
  • Dice your meat carefully, make sure every piece is cut evenly. Larger chunks take longer to cook, so you want to make use of those knife skills for even results.
  • Consider getting an oven-proof pan for all your casserole needs. That way, you can sauté the meat to golden-brown perfection before putting together your casserole.

How To Make the Perfect Casserole

For the perfect broccoli and chicken casserole, you must grease your pan first and foremost. That way, you’ll end with a lovely crust all around.

Make sure you season your chicken beforehand as well. Dried Italian herbs and a pinch of salt will give your cubed chicken an intense flavor.

The quality of the ingredients matters, especially when it comes to cheese. You might think all types of cheese are alike, but they’re not. Visit your local cheese monger and get artisan cheese, it’s ten times better than store-bought, and that makes all the difference.

Finally, don’t forget to broil your casserole until you get some amazing golden-brown spots; that’s what makes casseroles so tasty!

Other Casseroles You Might Want to Try

Here are a few other ideas we’ve put together to get your creativity flowing. Casseroles are supposed to be inventive, so use anything you have in hand!

Let’s start with a lovely egg, bacon and cheese casserole. Doesn’t that sound delicious? A meatless broccoli and cauliflower gratin is also a fantastic casserole that can serve as a side dish for a nice, thick steak.

Now, if you’re feeling adventurous, try a creamy shrimp chowder casserole, that’s a tremendous New England-inspired home-cooked meal.

Here’s a final thought. Why not cook a chicken enchilada casserole with a creamy, Poblano pepper sauce and lots of cheese? The sky´s the limit!
