Keto Blueberry Cream Cheese Cookies

Keto Blueberry Cream Cheese Cookies

Total Time: 1 hour

Creamy, delicious, these keto cheesecake cookies are quick to make and incredibly satisfying to eat. If you’re a cheesecake fan, but don't like the sugary option, you’re going to love this Keto version .

Ingredients

  • 1 cup almond flour
  • 1/4 cup cream cheese
  • 1 tsp sour cream / yogurt
  • 2 tsp lemon juice
  • zest of half a lemon
  • 2 drops liquid stevia
  • 2 tbsp powdered erythritol
  • 1/2 tsp vanilla extract
  • pinch of salt
  • 1 tsp blueberry powder (or any other fruit powder)
  • 1/4 cup unsweetened shredded coconut

Instructions

      In a medium bowl, mix together everything except shredded coconut.

      Place the mixture in the freezer for 30 minutes to harden enough to work with it like a dough. 

      Line a small tray with grease proof paper.

      With clean hands, pinch a generous tablespoon of mixture. Roll the mixture in your hands to shape into a ball. Then press into a cookie shape.

      Place the shredded coconut in a shallow bowl. Roll the cookie in the coconut.

      Refrigerate the keto blueberry cheesecake cookies  for 30 minutes, to allow them to set.

      Store leftovers in the fridge in an airtight container. Remove from fridge 5 minutes    before serving.

Notes

You can use the same recipe with different fruit powders to create unique cookies with different flavours and colours. 

*You can also omit the fruit powder for a classic cheesecake flavour.
