Let us tell you about these creamy one-biters. It all started because we were looking for a treat to share with friends and family coming over during this holiday season. Everyone has a different diet and unique weight goals. This means we needed a sweet treat that was both delicious and healthy.

Here’s where we started experimenting with cheesecake (because who doesn’t love cheesecake?) One thing led to another, and this is what we came up with.

What you’ll need for these tasty one-biters ?

If you’re strictly keto, meaning you avoid carbs as much as you can, you know fruit is allowed as long as you don’t overdo it. Well, we’re well using that permission.

Get your hand on the freshest strawberries you can find; the larger, the better, but also make sure they’re juicy, bright-red and deliciously ripe.

For our cheesecake filling, you’ll need some high-quality, full-fat cream cheese, one of our favorite ingredients. We’re combining it with a hefty addition of cold, heavy cream that will bring it home nicely.

As for the sweetener, there’s nothing wrong with using Swerve or any other granulated low-carb sweetener. As always, use what you have in hand.

Let me tell you we want a creamy, palate-coating texture, so we’re working with cold ingredients here. That means you’ll want to work fast.

Just a kiss of vanilla extract will liven things up, and for garnish, try to find unsweetened chocolate to drizzle the strawberries.

For our almond flour crust, you’ll need almond flour, butter and sweetener, and since these are no bake strawberry cheesecake bites, we’ll make up for the baking process by toasting the Almond flour on low heat until golden brown.

Ingredients

Cheesecake Filling

Almond Flour Crust

  • 3/4 cup Almond Flour
  • 3 tbsp Butter
  • 3 tbsp Swerve granular sweetener

Instructions

  1. Add Almond flour, melted butter and sweetener in a bowl and and mix it until it forms a wet sand like texture and then set aside.
  2. Put Cream cheese, sweetener, lemon juice and vanilla extract in a bowl and mix it with a hand mixer, put aside.
  3. Take Heavy whipping cream in a bowl and beat it until soft peaks form and Add it in the cream cheese mixture and mix it well with a spatula.
  4. Start putting the crust mixture in about 1/3rd of the paper cups and place the cups a cupcake pan.
  5. Slowly start filling the cheesecake mixture in the cups with a spoon.
  6. Place the keto cheesecake bites in a freezer for 6 hours or overnight.
  7. Slice fresh or frozen strawberries in half and put it on top of cheesecake bites and enjoy!

These are ABSOLUTELY INCREDIBLE! The obly chanGe i made was I used a monk fruit/erythritol blend and added a li extra be its not as sweeT.
