What Goes into Keto Blondies?

Since these are low-carb blondies, we’re not using all-purpose flour but almond flour. Make sure you use finely ground almonds and not coarser almond meal.

You’ll also need an egg and an egg yolk; that’s the perfect amount of egg. Coconut oil gives the blondies moisture, and baking soda will help these beauties rise in the oven.

Vanilla extract and shaved dark chocolate give the blondies their personality. But what’s truly exceptional is these treat’s moist and crumbly texture.

From an 9-inch square baking pan, you’ll get at least nine blondies, but you’ll wish you made more; these are gone in minutes! Especially if you have some friends over to try them.

Blondie brownies, these dessert bars are known for their heartwarming vanilla flavor. Low-carb, gluten-free, and sugar-free; they check all the right boxes.

Ingredients

  • 1/3 cup coconut oil
  • 1/2 cup erythritol
  • 1 egg + 1 egg yolk
  • 1 1/2 cup almond flour
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 cup unsweetened dark chocolate

Instructions

  1. In a bowl, add coconut oil and erythritol, mix with the help of a hand mixer, add eggs and vanilla and mix again.
  2. Add almond flour and baking soda and continue mixing, add coarsely chopped dark chocolate and mix for the final time.
  3. Transfer the mixture into a baking dish, greased with butter and lined with parchment paper.
  4. Bake at 180C for about 30 minutes.
